Quick Beef Soup





Ingredients.
1 1/2 pound beef, lean, ground
1 cup onion, chopped
2 each garlic, cloves, chopped fine
28 oz tomatoes, can, undrained
6 cup water
6 e beef bouillon, cubes
1/4 teaspoon pepper
1/2 cup orzo, uncooked
1 1/2 cup vegetables, frozen, mixed, peas, carrots, corn
1 french bread, optional


Directions

1. Cook beef, onion and garlic in a large saucepan over medium high heat, until the beef is brown, stirring to separate meat; drain fat.

2. Puree the tomatoes with juice in a covered blender or food processor.

3. Add tomatoes, water bouillon cubes and pepper to the meat mixture. Bring to a boil; reduce heat to low. Simmer, uncovered for 20 minutes.

4. Add orzo and vegetables. Simmer for 15 minutes more.
Serve with french bread.

*** The Orzo can soak up a lot of the water, What I personally do is cook the Orzo seperatetly to soak up much of the water. I than add it for 12 minutes on very low heat.***
